More than appearance is necessary for a successful, profitable design for a hotel, restaurant, hospital, club, or other accommodations facility. These facilities should be designed to produce cost effective results - profits for privately owned establishments.

Much of our work is with architects and planners. However, because of the wealth of practical experience that resides in our staff, we know whether or not a particular plan or layout will work in actual operations whether it is a flight kitchen or a ship's galley, a multi-outlet central food preparation unit, a free-standing ethnic kitchen in a restaurant or country club, or a satellite or serving facility. We have "been there before".

It is important that this kind of practical experience and know-how is put to work at the initial planning stage.

Using the planning steps for a resort hotel, for example, our services might include :

  1. Preliminary planning for both the front and back of the house. This includes recommendations as to the type and size of guest rooms, restaurants and bars, private banquet and meeting rooms, lobby, front desk and other public and support areas and the related space allocations.
  2. Preparation of schematic layouts for the various areas including placement of kitchen, bar, and room service equipment ; laundry security ; receiving ; storage ; employee lockers and feeling areas ; offices, including management, accounting, sales, reservations and catering.
  3. Coordination with architects, interior designer, general contractors and sub-contractors, major vendors, financial institutions during project construction to ensure adherence to capital budgets and project opening schedules.
  4. Preparation of a recommended list of major equipment with specifications and budget estimates for these and small equipment including china, glass, silver and other fixed asset supplies.
  5. Assistance in solicitation and evaluation of bids from equipment companies.
  6. Assistance in the coordination of equipment installation to assure adherence to specifications and budgets.
  7. Preparation of complete pre-opening budget including pre-opening marketing and promotion, negotiation of leases and concessions, staff training and similar activities.
